Oatmeal Griddle Cakes

 

 

 
2 cups cooked oatmeal
1 cup whole wheat flour
1 cup water, soy milk, milk or a combination to make 1 cup
1 T flax seed oil
1 tsp baking powder (optional)
4 T psyllium (optional)
1/2 tsp cinnamon (optional)
raisins (optional)
 

Mix flour into cooked oats, (add any of the optional ingredients) add oil and liquid. Mix well.

Drop 1/4 cup batter onto hot non-stick griddle per cake and cook for 3 - 5 minutes and then flip.

Cool, wrap and refrigerate. Toast or eat cold, with or without jam.
 
Makes about a dozen cakes. Enjoy
